Chicory, Pear & Walnut Side Salad

The perfect autumn side salad! New season pears are tasty as ever and this salad goes down a treat with whatever is on the menu. We’ve been having it alongside lazy pasta dishes and it does not disappoint. Depending on how big your bunch of greens are, you may need to adjust/increase the dressing quantity.

Ingredients

1 x bunch of chicory (or rocket)

1 x pear

1/2 cup walnuts

Parmesan

Dressing

2 tbsp olive oil

1 tbsp balsamic vinegar

1/2 tbsp apple cider vinegar

1 tsp honey

Pinch of salt

Few grinds of fresh black pepper

Method

  1. Lightly toast the walnuts in a fry pan over low heat until starting to brown, then set aside to cool.

  2. Combine all dressing ingredients in a jar or jug and mix well. Taste and add more olive oil if needed.

  3. Trim the chicory & slice the pear into thin slices and then place in your salad bowl.

  4. Crumble most of the walnuts into the salad bowl and gently mix though dressing. Top with a crumble of walnuts and a handful of fresh Parmesan shavings.
