Simple Side Salad

Everyone needs a simple side salad. Sub in whatever seasonal produce is on hand; something leafy / something fruity / something crunchy. Ooh la la.

Ingredients

1 x cos lettuce (or radicchio / loose salad leaves etc.)

1 x small red onion finely sliced (or a few shallots)

2 x cucumbers (or fennel / a few radishes etc.)

1 x peach (or other stone fruit / pear / orange etc.)

 

Dressing

1/4 cup olive oil

1/8 cup red wine vinegar

2 tsp maple syrup or honey

Pinch of salt

 

Method

  1. Combine dressing ingredients in a jar and shake to mix.

  2.  Roughly chop the lettuce and add to your salad bowl. Peel your cucumbers lengthwise with a wide vegetable peeler into ribbons, finely slice the onion, and slice the peach into wedges. Toss the onion with the lettuce and about half of the dressing, then arrange the cucumber and peaches on top and drizzle with the rest of the dressing.
